The Margheritan: a Traditional Tomato, Basil, and Cheese Pizza
The Margheritan
Today’s modern pizza of tomato sauce and cheese can be traced back to an Italian pizzario, Raffaele Esposito of Naples, owner of a tavern called Pizzeria di Pietro e Basta Cosi. In 1889, he created a pizza for the visiting Italian King Umberto I and Queen Margherita. He used tomatoes, basil, and mozzarella cheese to represent the Italian flag’s colors of red, green, and white. The queen asked Raffaele what the dish was called and the smart chef replied, “The Margherita, after you, my Queen.” This recipe calls for two types of mozzarella: One is sold shredded in plastic pouches, available in any supermarket; the other is fresh, a soft, white ball that melts into milky pillows. I usually buy an 8-ounce (225g) ball called fior de latte, or “flowers of milk.” Fresh mozzarella has a shelf life of about two weeks.

In my opinion the height of Asian soups can be found in a fragrant bowl of curry laksa. The base of the soup is a Laksa Paste, time consuming to make, but well worth it - make extra and freeze it for up to 6 months, it is great to have on hand and will allow you to throw together a fabulous meal at the last minute. 

Making Curry Laksa is two part journey - the first part of the journey is acquiring the ingredients for making the paste, I have included some links for ordering the harder to find ingredients online. The second part of the journey is putting together the soup itself. Below I have listed the ingredients and instructions for making the paste followed by the ingredients and instructions for the soup.

Sofrito - Catalan style Tomato and Onion Sauce

There are as many recipes for Sofrito as there are Spanish and Latin American cooks, this recipe is a "New World" rendition of a sauce that is arguably the essence and foundation of Spanish cooking. I use Videla onions which add a bit of sweetness to the sauce, and New Mexican chile powder (I use Chimayo style chile powder) to add an earthy note and a touch more spice. Latin American sofritos often include annato, cilantro and tomatios, but in this case I am leaning more toward the Spanish classic, to be used in Paellas and other traditional Spanish Dishes.

Layered Steamed Flounder with Miso Paste & Black Sesame in a Spiced Citrus Miso Broth with Bok Choy, Shitake & Black Fungus

This is a dish that I came up with after some experimentation I have been doing with Asian spice broths. The broth is a complex affair with hints of citrus and four complimenting spices that are wonderful with the light flaky flounder.



Ponzu Sauce

This is the classic Japanese sauce using yuzu juice. If you can’t find yuzu, lime juice is an acceptable substitute. Most Asian markets now stock bottled yuzu juice.

Ponzu is great on grilled meats, but you can use it to create a salad dressing with an Asian flair.

Pad Thai is often considered a signature dish of Thai cuisine. There are several regional variations, and many different recipes. This recipe tries to bring together the most common themes, spices and ingredients to create a familiar and authentic variation on this classic dish.



Salad of Prosciutto & Grilled Feijoa with Hazelnuts, Arugula, Pecorino Romano & Parsley Oil

This recipe was inspired by a dish we were served at Restaraunt II in Brisbane, Australia. The two recipes have some things in common, with a couple of significant changes in ingredients, the final recipe diverges quite a bit in the final product. The most important change was in the fruit. The original recipe was made with Tenthill figs, but instead I used Feijoa which is a remarkable fruit from Brazil. I was lucky enough to get to try one in the market (Whole Foods) and was suprised at the sweet floral perfume the fruit produced. The thick, white, custardlike flesh and the translucent central pulp enclosing the seeds are sweet and slightly acidic, suggesting a combination of pineapple and guava or pineapple and strawberry, with overtones of winter green or spearmint. The fruit has very small, oblong seeds that are hardly noticeable when the fruit is eaten. We ate the fruit whole, including the skin, which is slightly bitter compared to the inside, and has a distinct floral character which took this dish in a quite different direction than the original recipe that inspired it.



Parsley Oil

This brilliant green oil is rich with a deep grassy flavor - and as beautiful on the plate as it is to taste. I used a mild flavored extra virgin oil for the recipe, as the parsley will far overpower any complexity offered by the oil. Grapeseed oil might also be a nice selection for this oil.

"Fool the Meat Eaters" Chili
This recipe was adapted by my mother and myself from meat chili. We fed it to my dad and only told him afterwards it wasn't meat - he couldn't tell the difference! This is a fast and filling meal and is even better, cold or warm, the next day! I serve leftovers with tortilla chips or in a wrap. Chicken Chili

Black & White Vegetarian Chipotle Chili (Crock Pot)
This is medium-spicy, but like any chili recipe, you can modify this for your own taste by adjusting the amount of chipotle and chili powder used, and the type of canned tomatoes with peppers you use. I used Del Monte's Diced Tomatoes with Zesty Jalapenos, which I think is kickier than the typical tomatoes & green chilis. I brown ground beef on the side for my husband to put into his portion. Fast Three-Alarm Red Bean Chili - Vegan Friendly
This is one of the things I like to make when I don't have lots of time to cook and want something hearty. I'm a big fan of one-pot cooking and have experimented with chili quite a bit, and this one is my favorite so far. It is spicy enough to make your lips burn, so if you're feeding children or those with less of an appetite for spicy foods I would suggest substituting one or both cans of Ro-Tel for the mild variety and add chili powder to taste. I serve it with flour tortillas heated in a skillet as I always have some hanging around, but it would be great with cornbread. You can also add any kind of Mexican cheese after cooking - I prefer panela or queso fresco, they both have a sweeter taste than bagged cheddar mix. Hippie Pepper Chili Stew
My quest to find a good vegetarian chili recipe ended with this. It's a combination of a couple of recipes plus some adjustments and additions of my own. My roommate says it is not chili--more like a stew--but still really good, if only I left out the bell peppers. I don't really measure or time my recipes, so this is a bit approximate. Hot and Spicy Chili
The biggest thing to know about this recipe is it is designed to be as hot or not as you want it. You can pick the hot sauce, and the type of peppers you use depending on how hot you want it. The Mongolian Fire Oil is deceiving in name. The oil adds mild warmth to the full mouth, not a flaming burst so do not worry about adding the full amount. Jackie's New Mexico Green Chile
This is adapted from a recipe I found online called Karen's New Mexico Green Chile. If you google it by that title, you'll find it. I've made some adaptations of my own over the years. This one is pretty low in fat and carbs, as there is no thickening agent needed. The consistency is already nice and thick because of the pureed peppers and tomatillos. Feel free to tweak the amounts to taste, of course. And, of course, use chili peppers of whatever heat that you prefer. Mix & Bake Chili Cornbread
This is an all-in-one dish from Fleischmann's Yeast. The bread bakes along with your chili. The original doesn't call for peppers but I added red and green peppers because, to me, it just isn't chili without them. I didn't use chili powder, just two tablespoon's Club House Tex Mex Seasoning in place of the package of chili seasoning mix. Also, I used no salt added tomato sauce. Tried the recipe for the first time and really liked so wanted to post it before I lost it. Burn Notice Chili
This chili is a new recipe that I put together for a chili cook-off where I work. I researched the winning recipes from the last 15 years of the annual chili cook-off held in Terlingua, TX. I then simply took what I liked, and left out what I didn't as far as ingredients. Then put that together with some of the basic ingredients that I had been using for years. The grilling technique is my own addition, and lends a beautiful smokey flavor to the chili. I love the show "Burn Notice" on USA, and I thought it would make a great name for my chili.
